Ingredients:

4 sea bass fillets (6-8 oz each)
2 tablespoons soy sauce
1 tablespoon rice wine (optional)
1 teaspoon sesame oil
1/2 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons cornstarch
2 tablespoons vegetable oil

For the Ginger Onion Stir-Fry:

2 tablespoons vegetable oil
1/4 cup fresh ginger, julienned
4 green onions, sliced into 2-inch pieces
2 cloves garlic, minced
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 teaspoon sugar
1/4 cup water

Directions:

Marinate the Sea Bass:
In a small bowl, mix soy sauce, rice wine (if using), sesame oil, salt, and white pepper. Rub this mixture onto the sea bass fillets. Let them marinate for 15 minutes.

Coat and Fry the Sea Bass:
Pat the fillets dry with a paper towel and coat lightly with cornstarch. Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat. Fry the sea bass fillets for 3-4 minutes per side, or until golden brown and cooked through. Remove and set aside on a plate.

Make the Ginger Onion Stir-Fry:
In the same skillet, add 2 tablespoons of vegetable oil. Sauté the ginger and garlic for 1-2 minutes until fragrant. Add the green onions and stir-fry for 1 minute.

Prepare the Sauce:
Stir in the oyster sauce, soy sauce, sugar, and water. Simmer for 1-2 minutes until slightly thickened.

Assemble and Serve:
Return the fried sea bass to the skillet, spooning the ginger onion sauce over the fillets. Simmer for 1-2 minutes to allow the flavors to meld. Serve immediately with steamed rice or vegetables.

Tips:
