These pumpkin cookies are soft, spiced, and full of fall flavors, making them a perfect treat!

### **Ingredients**:

#### Cookies:

– 2 ½ cups all-purpose flour

– 1 tsp baking powder

– 1 tsp baking soda

– 1 tsp ground cinnamon

– ½ tsp ground nutmeg

– ½ tsp ground ginger

– ¼ tsp ground cloves

– ½ tsp salt

– 1 cup unsalted butter (softened)

– 1 cup granulated sugar

– ½ cup brown sugar (packed)

– 1 cup pumpkin puree (not pumpkin pie filling)

– 1 large egg

– 1 tsp vanilla extract

#### Optional Glaze:

– 1 cup powdered sugar

– 2-3 tbsp milk (or more for desired consistency)

– ½ tsp vanilla extract

### **Instructions**:

#### 1. **Preheat Oven**:

   Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

#### 2. **Mix Dry Ingredients**:

   In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.

#### 3. **Cream the Butter and Sugars**:

   In a large bowl, using an electric mixer, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).

#### 4. **Add Wet Ingredients**:

   Add in the pumpkin puree, egg, and vanilla extract. Mix until well combined.
