– Salt and black pepper (to taste)

– 1/2 teaspoon dried oregano or thyme (optional, for added flavor)

– Olive oil or vegetable oil (for frying)

### **Instructions:**

1. **Prepare the Veggies:**

   – Grate the zucchinis, carrots, and potatoes using a box grater.

   – Squeeze out the excess moisture from the zucchini and potatoes by pressing them in a clean kitchen towel or paper towel.

2. **Mix the Ingredients:**

   – In a large bowl, combine the grated zucchini, carrots, potatoes, finely chopped onion, and minced garlic.
