### **Tuscan White Bean Soup** 

*A rustic Italian-inspired soup packed with creamy white beans, fresh veggies, and aromatic herbs!*

– 2 tbsp olive oil 

– 1 small onion, diced 

– 2 carrots, diced 

– 2 celery stalks, diced 

– 3 cloves garlic, minced 

– 1 tsp dried thyme 

– 1 tsp dried oregano 

– 1/2 tsp red pepper flakes (optional, for heat) 

– 1 (14 oz) can diced tomatoes 

– 4 cups vegetable broth (or chicken broth) 

– 2 (15 oz) cans white beans (cannellini or Great Northern), drained & rinsed 

– 1 cup chopped kale or spinach 

– 1/2 tsp salt (or to taste) 

– 1/4 tsp black pepper 

– 1/4 cup grated Parmesan cheese (optional, for serving) 

– Fresh parsley or basil, for garnish 

– Crusty bread, for serving 

#### **Instructions:** 

1. **Sauté the aromatics:** 

   – Heat olive oil in a large pot over medium heat. 

   – Add onion, carrots, and celery. Cook for 5–6 minutes until softened. 

   – Stir in garlic, thyme, oregano, and red pepper flakes. Sauté for another minute until fragrant. 

2. **Simmer the soup:** 

   – Add diced tomatoes and broth. Bring to a gentle boil. 

   – Stir in white beans, reduce heat, and let simmer for 15–20 minutes. 

3. **Finish with greens:** 

   – Add chopped kale or spinach and cook for 2–3 more minutes until wilted. 

   – Season with salt and black pepper to taste.
