### **Zucchini and Cheese Skillet Bake** 

*A cheesy, golden-baked dish with fresh zucchini, tomatoes, and savory flavors!* 

#### **Ingredients:** 

– 2 zucchini, grated 

– Salt, to taste 

– 2 tomatoes, chopped 

– 1/2 onion, finely chopped 

– 2 cloves garlic, minced 

– 1/2 teaspoon black pepper 

– 1/2 teaspoon dried oregano or Italian seasoning 

– 1/2 teaspoon paprika (optional) 

– 2 tablespoons olive oil or butter 

– 3 eggs, beaten 

– 1/2 cup (50g) shredded mozzarella cheese 

– 1/2 cup (50g) grated Parmesan cheese 

– 1/4 cup (60ml) milk or cream 

– 2 tablespoons fresh parsley or basil, chopped (for garnish) 

### **Instructions:** 

#### **1. Prepare the Ingredients** 

1. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Sprinkle with a little salt and let it sit for **5 minutes**, then squeeze again. 

2. Chop the tomatoes, onion, and garlic. 

#### **2. Cook the Vegetables** 

1. Heat olive oil in an oven-safe skillet over medium heat. 

2. Add the onion and garlic, sautéing for **2–3 minutes** until softened. 

3. Stir in the tomatoes, zucchini, black pepper, oregano, and paprika. Cook for **5 minutes** until the mixture reduces slightly. 

#### **3. Add the Egg and Cheese Mixture** 

1. In a bowl, whisk the eggs, milk, and half of the cheese. 

2. Pour the egg mixture over the sautéed vegetables, stirring slightly to distribute evenly. 

#### **4. Bake the Skillet** 

1. Sprinkle the remaining cheese on top. 

2. Transfer the skillet to a **preheated oven at 375°F (190°C)** and bake for **15–20 minutes**, or until the eggs are set and the cheese is golden. 

#### **5. Serve & Enjoy!** 

– Garnish with fresh parsley or basil.
