#### **Ingredients:** 

✅ 1 small young cabbage, shredded 

✅ Salt, to taste 

✅ 1 carrot, grated 

✅ 2 tablespoons olive oil 

✅ 1 onion, chopped 

✅ 1 potato, grated 

✅ 3 eggs 

✅ 50g cheese, grated (any cheese of your choice) 

✅ Black pepper, to taste 

✅ ½ teaspoon dried herbs (oregano or thyme) 

✅ Fresh parsley, chopped (for garnish)

#### **Instructions:** 

1️⃣ **Prepare the Vegetables** 

- Sprinkle shredded cabbage with a little salt and let it sit for 5 minutes to soften. 

- Squeeze out excess water. 

2️⃣ **Sauté the Base** 

- Heat olive oil in a pan over medium heat. 

- Add chopped onion and sauté until soft. 

- Stir in grated carrot and potato, cooking for 3-4 minutes until slightly tender. 

3️⃣ **Mix the Batter** 

- In a bowl, beat the eggs. 

- Add grated cheese, salt, black pepper, and dried herbs. 

- Stir in the sautéed vegetables and shredded cabbage, mixing well. 

4️⃣ **Cook the Frittata** 

- Heat a little oil in a non-stick pan. 

- Pour in the mixture, spreading it evenly. 

- Cover and cook over low heat for 8-10 minutes until set. 

- Flip carefully using a plate and cook the other side for 5 minutes.
