– 450 g wheat flour 

– 150 g semolina 

– 1 teaspoon salt 

– 1 teaspoon sugar (optional, for slight tenderness) 

– 1 teaspoon instant yeast (optional, for softer texture) 

– 2 tablespoons olive oil 

– 300 ml warm water (adjust as needed) 

##### **For the Filling:** 

– 1 cup shredded mozzarella cheese 

– 1/2 cup crumbled feta or ricotta cheese 

– 3 green onions, finely chopped 

– 1/4 cup fresh parsley, chopped 

– 1/2 teaspoon black pepper 

– 1/2 teaspoon red pepper flakes (optional, for heat) 

– 1 clove garlic, minced (optional, for extra flavor) 

– 1 tablespoon melted butter or olive oil (for brushing) 

### **Instructions:** 

#### **1. Prepare the Dough** 

1. In a large bowl, mix wheat flour, semolina, salt, and sugar. 

2. If using yeast, dissolve it in warm water and let it sit for 5 minutes before adding to the flour. 

3. Gradually add warm water and olive oil, mixing until a dough forms. 

4. Knead for 8–10 minutes until smooth and elastic. Cover and let rest for 30 minutes. 

#### **2. Prepare the Filling** 

1. In a bowl, combine mozzarella, feta (or ricotta), green onions, parsley, black pepper, and red pepper flakes. 

2. Stir well to mix all the ingredients evenly.

1. Divide the dough into equal portions (6–8 pieces). 

2. Roll out each piece into a thin circle or oval.
