Ginger Oatmeal Cookies

These crunchy oatmeal cookies are made with ginger, and they have an amazing taste. You can make them on weekends and enjoy them with your family with a warm cup of tea during the winter to keep you warm and energized. They may take some time and money to make, but they are definitely worth it. *No baking is required. Ingredients: 3/4 cup of unsalted creamy almond butter (or peanut butter) 4 tablespoons of coconut oil 1/3 cup of honey 1/4 cup of molasses 3/4 teaspoon of salt 1 teaspoon of cinnamon 1/2 teaspoon of ground ginger 1/4 teaspoon of mixed spices 1/4 teaspoon of ground nutmeg 1/4 teaspoon of ground cloves 1 teaspoon of vanilla extract 2 cups of oatmeal Directions: Prepare a baking sheet or silicone cupcake molds lined with butter paper.

In a medium saucepan over medium heat, mix the almond butter, coconut oil, honey, molasses, salt, and spices. Cook and stir until everything is melted and well combined. Remove the mixture from heat, add vanilla extract, and then stir in the oatmeal. After mixing all the ingredients, pour the mixture into the baking sheet. Put the baking sheet in the refrigerator for 2-3 hours. Take out the baking sheet from the refrigerator and cut it into squares. Enjoy!
