Herb-Grilled Chicken with Roasted Veggies
A simple, flavorful, and healthy meal for any day of the week!
Ingredients:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp dried thyme
Salt & pepper to taste
For the Veggies:
1 zucchini, sliced
1/2 red bell pepper, sliced
1/2 cup mushrooms
1 tbsp olive oil
1/2 tsp dried Italian herbs
Salt & pepper to taste
Step by Step:
Marinate the Chicken:
Rub the chicken breasts with olive oil, garlic powder, paprika, oregano, thyme, salt, and pepper.
Let it marinate for at least 15 minutes (or overnight for deeper flavor).
Prepare the Vegetables:
Toss the zucchini, red bell pepper, and mushrooms with olive oil, Italian herbs, salt, and pepper.
Grill the Chicken & Veggies:
Preheat a grill or grill pan over medium-high heat.
Cook the chicken for 5-7 minutes per side until fully cooked.
Grill the vegetables for about 3-4 minutes per side until charred and tender.
Serve & Enjoy:
Plate the grilled chicken with the roasted veggies.
Garnish with fresh herbs if desired.
