lava cake recipe
- 1/2 cup unsalted butter
- 4 oz (113g) dark chocolate (chopped)
- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- A pinch of salt
- Butter and cocoa powder (for greasing the ramekins) Instructions
Preheat your oven to 425°F (220°C). Grease 4 ramekins with butter and dust them with cocoa powder. Tap out the excess cocoa powder and place the ramekins on a baking sheet.
In a microwave-safe bowl, melt the butter and dark chocolate together in 30-second intervals, stirring after each, until smooth and fully melted. Let it cool slightly.
Whisk the powdered sugar into the melted chocolate mixture until well combined.
Add the eggs and egg yolks, one at a time, whisking well after each addition. Mix in the vanilla extract.
Gently fold in the flour and a pinch of salt until just combined. Be careful not to overmix.
Divide the batter evenly among the prepared ramekins.
Bake for 12-14 minutes, or until the edges are set, but the center is still soft and slightly jiggly.
Remove the ramekins from the oven and let them sit for 1 minute. Run a knife around the edges of each cake to loosen them.
Invert the ramekins onto serving plates and gently lift them off. The cakes should release easily.
Serve the Chocolate Lava Cakes immediately, with a dusting of powdered sugar, a scoop of vanilla ice cream, or fresh berries if desired.
