Marinated Roast Chicken with Potato and Cabbage Salad**!

### Ingredients:

#### For the Chicken Marinade:

- **1/4 cup (60ml)** vegetable oil

- **1/4 cup (60ml)** water

- **2 tsp** salt

- **1 tbsp** dried garlic

- **2 tbsp** paprika

- **1 tsp** black pepper

- **2 tbsp** tomato paste

#### For the Roast Chicken:

- **1 whole chicken** (about 4 lbs/1.8 kg)

- **1 tbsp** olive oil (for roasting)

- **Fresh herbs** (such as rosemary or thyme)

#### For the Potato and Cabbage Salad:

- **4 medium potatoes**, peeled and boiled

- **1/2 small cabbage**, finely shredded

- **2 tbsp** olive oil

- **1 tbsp** vinegar (white wine or apple cider)

- **Salt and pepper** to taste

- **1/2 red onion**, finely chopped

- **Fresh parsley**, chopped (optional)

### Instructions:

1. **Prepare the Marinade**: In a bowl, mix together the vegetable oil, water, salt, dried garlic, paprika, black pepper, and tomato paste. Whisk until smooth.

2. **Marinate the Chicken**: Place the whole chicken in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s fully coated. Seal or cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate.

3. **Preheat the Oven**: Preheat your oven to **375°F (190°C)**.

4. **Roast the Chicken**: Remove the chicken from the marinade and place it on a roasting pan. Rub the chicken with olive oil and season with fresh herbs. Roast for about **1.5 hours**, or until the internal temperature reaches **165°F (74°C)**, basting occasionally with its own juices.

5. **Make the Potato and Cabbage Salad**: While the chicken roasts, boil the potatoes in salted water until tender, about 15 minutes. Drain and let them cool slightly before cutting them into cubes.

6. **Assemble the Salad**: In a large bowl, combine the boiled potatoes, shredded cabbage, olive oil, vinegar, red onion, salt, and pepper. Toss well to combine. If desired, garnish with fresh parsley.

7. **Serve**: Once the chicken is roasted, carve and serve alongside the potato and cabbage salad for a wholesome meal.
