Mediterranean Baked Fish
Herb-Crusted Mediterranean Fish with Olive and Tomato Topping
Ingredients:
4 fillets of white fish (such as cod, sea bass, or haddock) ????
2 cups cherry tomatoes, halved ????
1/2 cup Kalamata olives, pitted and sliced ????
1 medium red onion, thinly sliced ????
3 garlic cloves, minced ????
3 tbsp olive oil ????
1 lemon, sliced into thin rounds ????
1 tsp dried oregano ????
1/2 tsp smoked paprika ????️
1/4 cup fresh parsley, chopped ????
Salt and pepper, to taste ????
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a large baking dish with olive oil.
Arrange the fish fillets in the dish, leaving space between each piece. Season both sides of the fillets with salt, pepper, and smoked paprika.
Scatter the cherry tomatoes, olives, red onion, and garlic evenly around the fish. Drizzle with olive oil and sprinkle with oregano.
Top each fish fillet with a lemon slice to enhance flavor.
Bake uncovered for 20-25 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
Remove from the oven and garnish with fresh parsley before serving.
Serve warm with crusty bread, rice, or a fresh green salad for a complete Mediterranean-inspired meal.
