Milk brioche recipe

Ingredients: 4 cups all-purpose flour 1/4 cup granulated sugar 2 1/4 teaspoons instant yeast 1 teaspoon salt 3/4 cup warm milk 4 large eggs 1/2 cup unsalted butter, softened 1 egg yolk (for egg wash) 1 tablespoon milk (for egg wash) Instructions: In a large mixing bowl, combine the flour, sugar, instant yeast, and salt. Mix well. In a separate bowl, whisk together the warm milk and eggs until well combined. Make a well in the center of the dry ingredients and pour in the milk and egg mixture. Stir with a wooden spoon until a rough dough forms. Transfer the dough to a floured surface and knead for about 10 minutes, until the dough becomes smooth and elastic.

Gradually add the softened butter, a little at a time, while kneading the dough. Continue kneading until all the butter is fully incorporated and the dough is smooth and shiny. Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 to 2 hours, or until it doubles in size. Once the dough has risen, punch it down to release the air. Divide the dough into equal portions and shape them into small brioche buns or a large brioche loaf. Place the shaped brioche on a baking sheet lined with parchment paper.

Cover them with a clean kitchen towel and let them rise for another 30 to 45 minutes, or until they have doubled in size. Preheat your oven to 350°F (175°C). In a small bowl, whisk together the egg yolk and tablespoon of milk to make the egg wash. Gently brush the brioche with the egg wash, being careful not to deflate the dough. Bake the brioche in the preheated oven for about 20 to 25 minutes for buns, or 30 to 35 minutes for a loaf, until they turn golden brown on top. Remove the brioche from the oven and let them cool on a wire rack before serving. Enjoy your homemade milk brioche!
