Potato & Spinach Skillet with Mozzarella and Parmesan

Ingredients:

  • 2 cloves of garlic (minced)
  • 50g (1.7 oz) mozzarella, diced
  • Fresh spinach (about 2 cups)
  • Parmigiano Reggiano, grated (to taste)
  • 1 egg
  • Salt, to taste

Instructions:

  1. Prepare the Spinach:
    • Heat a skillet over medium heat and add a splash of olive oil. Once hot, add the garlic and sauté for about 1 minute until fragrant.
    • Add the fresh spinach to the skillet and cook for 4-5 minutes, stirring occasionally, until wilted. Season with a pinch of salt.
  2. Add the Egg:
    • Push the spinach to the side of the skillet and crack the egg into the empty space. Scramble it slightly, then stir the spinach and egg together to mix. Cook for another minute or two.
  3. Add the Mozzarella and Parmigiano:
    • Lower the heat and add the diced mozzarella to the pan. Stir everything together, letting the cheese melt into the spinach and egg mixture. Sprinkle in some grated Parmigiano Reggiano for extra flavor.
  4. Serve:
    • Once the cheese has melted and everything is well combined, taste and adjust seasoning with a little more salt if needed. Serve warm!
