Ingredients:
- 1 cup fresh corn (frozen can work too)
- 2 medium zucchini, sliced
- 2 bell peppers (any color), chopped
- 1 pound chicken or turkey sausage, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions:
1. Heat a large skillet over medium-high heat and add the olive oil. Once hot, toss in the pieces of chicken or turkey sausage.
2. Sauté the sausage for about 5-7 minutes, stirring occasionally until browned and cooked through.
3. Add the chopped bell peppers and sliced zucchini to the skillet. Stir everything together for 3-4 minutes until the vegetables begin to soften.
4. Sprinkle in the garlic powder, onion powder, salt, and pepper. Mix well to evenly coat the sausage and veggies with the seasonings.
5. Lastly, add in the corn and stir for an additional 2-3 minutes until everything is heated through and the veggies are tender but still vibrant.
6. Remove from heat and sprinkle with fresh cilantro before serving. Enjoy your delicious one-pan meal!
