Spiced Carrot Latte Cake

Ingredients:

200 g grated carrots

2 eggs

100 g brown sugar

120 g flour

1 tsp baking powder

½ tsp cinnamon

1 espresso shot

80 ml milk

2 tbsp olive oil

Instructions:

Preheat oven to 180°C (350°F).

Mix eggs and sugar until fluffy.

Add carrots, flour, baking powder, cinnamon, espresso shot, milk, and oil. Mix well.

Pour into a lined loaf tin and bake for 30–35 minutes.

Serve with a dusting of cocoa powder.
