This homemade apple pie is the perfect treat to enjoy on a cozy Sunday afternoon. With its flaky crust, sweet and spiced apple filling, and a golden finish, it’s the ultimate comfort dessert for any occasion.
Ingredients:
**For the Crust:**
– 2 ½ cups all-purpose flour
– 1 tsp sugar
– 1 tsp salt
– 1 cup (2 sticks) unsalted butter, cold and cut into small cubes
– 6-8 tbsp ice water
**For the Filling:**
– 6-8 medium apples (a mix of tart and sweet apples like Granny Smith and Honeycrisp work best)
– ¾ cup granulated sugar
– ¼ cup brown sugar (packed)
– 2 tbsp all-purpose flour (for thickening)
– 1 tsp ground cinnamon
– ¼ tsp ground nutmeg
– 1 tbsp lemon juice
– 1 tsp vanilla extract
– 1 tbsp unsalted butter (cut into small pieces)
– 1 tbsp milk (for brushing the crust)
– 1 tbsp coarse sugar (for sprinkling on top)
Instructions:
**Step 1: Make the Pie Crust**
1. In a large mixing bowl, combine the flour, sugar, and salt.
2. Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs, with pea-sized bits of butter remaining.
3. Gradually add 6-8 tablespoons of ice water, one tablespoon at a time, mixing gently with a fork until the dough begins to come together. Avoid overworking the dough.
4. Split the dough into two equal portions. Flatten each portion into a disk, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
**Step 2: Prepare the Apple Filling**
1. Peel, core, and slice the apples into about ¼-inch thick slices.
2. In a large bowl, toss the apple slices with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract until well combined. Let it sit for about 10 minutes to allow the juices to release.
**Step 3: Assemble the Pie**
1. Preheat the oven to 375°F (190°C).
2. Roll out one of the chilled dough disks on a lightly floured surface to fit a 9-inch pie dish. Place the rolled dough into the dish and press gently into the edges.
3. Pour the apple mixture into the crust, spreading the apples evenly. Dot the filling with small pieces of butter.
4. Roll out the second disk of dough and place it over the apple filling. Trim any excess dough, then pinch and crimp the edges to seal the pie.
5. Cut a few small slits in the top crust to allow steam to escape. Brush the top of the pie with a little milk and sprinkle with coarse sugar for a golden, sweet finish.
**Step 4: Bake the Pie**
1. Place the pie on a baking sheet to catch any drips. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling through the slits.
2. If the edges of the crust start to brown too quickly, cover them with aluminum foil and continue baking.
