Ingredients:

Bottom Layer:

- 400g phyllo dough

- 2 tbsp butter

- 1½ cups pistachio cream

- 1-2 tbsp tahini

Cheesecake Layer:

- 500g cream cheese (mascarpone, at room temperature)

- 150g condensed milk

- 200ml double cream

- 1 tsp vanilla extract

Ganache:

- 150ml double cream

- 200g milk/dark chocolate (50/50 mix recommended)

Method:

1. Prepare the Bottom Layer:

   - Start by shredding the phyllo dough. In a pan, melt the butter and add the shredded phyllo dough. Toss until golden and crispy. Let it cool for a bit.

   - Once cooled, add the tahini and pistachio cream to the phyllo mixture and mix well.

2. Make the Cheesecake Layer:

   - In a bowl, add the cream cheese and condensed milk. Beat until smooth.

   - Gradually add the double cream and vanilla extract, beating until stiff peaks form.

3. Prepare the Ganache:

   - In a separate bowl, add the chocolate to the hot double cream. Cover and let it sit for 5 minutes, then stir until smooth.

4. Assemble the Cheesecake:

   - In an 8-inch pan, add the phyllo dough mixture and press down firmly with a spoon or cup to create an even layer.

   - Pour the cream cheese mixture over the phyllo layer, smoothing it out evenly.

   - Finally, pour the ganache over the top, spreading it evenly.

5. Chill:

   - Refrigerate the cheesecake for 6-8 hours or overnight to set.

6. Garnish and Serve:
