A Delicious Peaches & Cream Loaf:

Ingredients: 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup unsalted butter, softened 1 cup granulated sugar 2 large eggs 1 teaspoon vanilla extract 1/2 cup sour cream 1 cup peaches, peeled and diced (fresh or canned) For the cream filling: 4 ounces cream cheese, softened 1/4 cup granulated sugar 1 large egg 2 tablespoons all-purpose flour 1/2 teaspoon vanilla extract For the streusel topping: 1/4 cup all-purpose flour 1/4 cup granulated sugar 2 tablespoons unsalted butter, chilled and cubed

Instructions: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Begin and end with the dry ingredients, mixing just until combined. Be careful not to overmix.

In a separate small bowl, prepare the cream filling. Beat together the cream cheese, sugar, egg, flour, and vanilla extract until smooth and well combined. Pour half of the batter into the prepared loaf pan. Spread the cream filling evenly over the batter. Top with the diced peaches. Pour the remaining batter over the peaches, spreading it evenly. In another small bowl, prepare the streusel topping.

Combine the flour and sugar, then cut in the chilled butter cubes using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Sprinkle the streusel over the top of the batter. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The baking time may vary, so keep an eye on it. Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing and serving.
