Southern Fried Salmon Patties are a classic dish that combines canned salmon with various seasonings to create flavorful and crispy patties.

2 cans (14.75 ounces each) pink or red salmon, drained and bones removed 1/2 cup finely chopped onion 1/4 cup finely chopped celery 1/4 cup finely chopped green bell pepper 2 large eggs, beaten 1 cup breadcrumbs (divided) 1/4 cup mayonnaise 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce 1 teaspoon Old Bay seasoning (optional) 1/2 teaspoon garlic powder 1/2 teaspoon onion powder Salt and pepper to taste Vegetable oil for frying

Instructions: In a large bowl, combine the drained salmon, chopped onion, chopped celery, chopped green bell pepper, beaten eggs, 1/2 cup breadcrumbs, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning (if using), garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined. Shape the mixture into patties, about 2-3 inches in diameter. You should get approximately 8 patties.

Place the remaining 1/2 cup of breadcrumbs on a plate. Coat each salmon patty with breadcrumbs, pressing gently to adhere.

In a large skillet, heat vegetable oil over medium heat. Fry the salmon patties for 3-4 minutes on each side or until they are golden brown and crispy. Be careful not to overcrowd the pan; you may need to fry them in batches. Once cooked, transfer the salmon patties to a paper towel-lined plate to drain any excess oil.

Serve the Southern Fried Salmon Patties hot with your favorite dipping sauce or alongside a salad or coleslaw. Enjoy your delicious Southern Fried Salmon Patties!
