the famous Turkish Bodrum kebab?
Ingredients: 1/2 kilogram of potatoes Vegetable oil for frying 5 tablespoons of yogurt Crushed garlic to taste 1/2 cup of hot water For the butter sauce: Oil Butter Red pepper flakes For the red sauce: 3 tablespoons of oil 2 grated tomatoes 1 teaspoon of tomato paste 1 teaspoon of salt 1 teaspoon of red pepper For the marinade: 1/2 kilogram of steak, cut into strips 4 tablespoons of oil 1 teaspoon of dried thyme 1 teaspoon of red pepper 1 tablespoon of grated onion 1/2 teaspoon of black pepper 1 tablespoon of yogurt Salt to taste Instructions: In a bowl, mix together the yogurt, grated onion, red and black pepper, and dried thyme until well combined.
Add the vegetable oil to the bowl and mix until the marinade is fully combined. Then add the steak to the marinade and mix until all the meat is coated. Leave the meat to marinate for about two hours so it absorbs all the flavors. Put the meat in a non-stick pan with hot water and cook while stirring occasionally. Cut the potatoes into small strips or grate them lengthwise. Season with salt, then fry them in hot oil until golden and crispy. Drain and set aside. Once the meat is cooked, add salt to taste and stir. In a separate bowl, mix yogurt with crushed garlic (if desired) and stir without adding water. Put the fried potatoes on a serving dish, add a layer of garlic yogurt, then add the meat on top.
To prepare the red sauce, heat oil in a pan and add grated tomatoes, tomato paste, salt, and red pepper. Cook and stir until the sauce thickens. Melt the butter with a little oil in a separate pan, add the red pepper flakes and stir for a minute. Pour the red sauce and butter sauce over the meat, and the dish is ready to serve.
