Taco lasagna combines the flavors of tacos with the comfort of lasagna, creating a delicious and satisfying dish. Here’s a recipe to make taco lasagna at home:

Ingredients: 1 pound ground beef (or ground turkey) 1 small onion, diced 1 packet (1.25 ounces) taco seasoning mix 1 can (15 ounces) black beans, drained and rinsed 1 can (15 ounces) diced tomatoes, drained 1 can (4 ounces) diced green chilies, drained 1 cup frozen corn kernels 1 cup salsa 12 lasagna noodles, cooked according to package instructions 2 cups shredded Mexican blend cheese Optional toppings: diced tomatoes, sliced green onions, chopped cilantro, sour cream, sliced black olives Instructions: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened, breaking up the meat with a spoon as it cooks. Drain off any excess grease. Stir in the taco seasoning mix, black beans, diced tomatoes, diced green chilies, frozen corn, and salsa. Cook for another 5 minutes, stirring occasionally, until everything is heated through and well combined.

Remove from heat. To assemble the taco lasagna, spread a thin layer of the meat mixture on the bottom of the prepared baking dish. Place 4 cooked lasagna noodles on top, overlapping slightly to cover the bottom of the dish.

Spread half of the remaining meat mixture over the noodles, then sprinkle with 1 cup of shredded cheese. Place another layer of 4 cooked lasagna noodles on top of the cheese, followed by the remaining meat mixture. Finish with the final layer of 4 cooked lasagna noodles, then sprinkle the remaining 1 cup of shredded cheese evenly over the top. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. Let the taco lasagna cool for a few minutes before slicing and serving.
