Walking Taco Casserole:

Ingredients:

1 pound ground beef 1 small onion, diced 1 packet taco seasoning mix 1 can (10 ounces) diced tomatoes with green chilies, drained 1 can (10 ounces) enchilada sauce 1 can (15 ounces) black beans, drained and rinsed 1 bag (9 ounces) corn chips (like Fritos) 2 cups shredded cheddar cheese Optional toppings: shredded lettuce, diced tomatoes, sliced olives, sour cream, salsa, guacamole, etc. Instructions: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.

In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is softened.

Drain any excess grease. Stir in the taco seasoning mix, diced tomatoes with green chilies, enchilada sauce, and black beans. Let the mixture simmer for about 5 minutes, stirring occasionally. Spread half of the corn chips evenly in the bottom of the prepared baking dish. Spoon half of the beef mixture over the corn chips.

Sprinkle half of the shredded cheddar cheese over the beef mixture. Repeat the layers with the remaining corn chips, beef mixture, and shredded cheddar cheese.

Cover the casserole with foil and bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is melted and bubbly. Remove the foil and bake for an additional 5 minutes, or until the cheese is golden brown. Serve hot, topped with your favorite taco toppings such as shredded lettuce, diced tomatoes, sliced olives, sour cream, salsa, guacamole, etc. Enjoy your delicious Walking Taco Casserole!
