Quinoa salad with chicken and avocado
You can prepare the quinoa salad with chicken and avocado by adding your favorite salad greens and as many as you want.
2 large chicken breasts, sliced and grilled
1 cup of quinoa
2 cups of water
2 tablespoons olive oil
Lemon juice with rind first
¼ teaspoon salt
¼ teaspoon black pepper
5 cups of green salad, to taste
1 cup chopped small tomatoes
Avocado cut into slices
2 bunches chopped fresh basil leaves
How to prepare
Wash the quinoa well, drain and set aside.
Bring a pot on the fire, and put each of the quinoa and olive oil for a minute, then add water and a pinch of salt and leave it to boil until it is cooked for a quarter of an hour after reducing the fire.
Remove the quinoa from the stove and set it aside to cool.
To prepare the salad dressing, add a tablespoon of olive oil, juice, lemon peel, salt and pepper, and stir well.
In a bowl, put the greens with the previously prepared salad dressing, then add the chicken along with quinoa, tomatoes, basil and avocado, then sprinkle with lemon juice and olive oil and serve.
