Ingredients: 2 pounds (about 1 kg) Yukon Gold or Russet potatoes, peeled and thinly sliced (about 1/8 inch thick) 2 cups (480 ml) heavy cream 1 cup (240 ml) whole milk 3 cloves garlic, minced 1 small onion, thinly sliced 1 1/2 cups (150g) shredded Gruyere cheese (you can also use cheddar or a mix of cheeses) 1/2 cup (50g) grated Parmesan cheese 3 tablespoons (42g) unsalted butter, cut into small pieces 2 tablespoons (16g) all-purpose flour 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme) 1/2 teaspoon ground nutmeg Salt and pepper, to taste Instructions: Preheat your oven to 375°F (190°C). Grease a 9×13 inch (23×33 cm) baking dish with butter or cooking spray. In a saucepan, melt the butter over medium heat. Add the minced garlic and sliced onions, sauté until the onions become translucent and fragrant, about 2-3 minutes.

Stir in the flour and cook for an additional 1-2 minutes until the flour is well combined with the butter and forms a paste-like consistency. Slowly pour in the heavy cream and whole milk while continuously whisking to avoid lumps. Cook the mixture for about 5 minutes, stirring frequently, until it thickens and begins to simmer. Season with salt, pepper, and ground nutmeg. Layer half of the sliced potatoes in the prepared baking dish, slightly overlapping each other.

Sprinkle half of the thyme leaves over the potatoes. Pour half of the creamy sauce over the first layer of potatoes, making sure to cover them evenly. Sprinkle half of the shredded Gruyere and grated Parmesan cheese over the sauce. Repeat the process with the remaining potatoes, thyme, creamy sauce, and cheeses.

Cover the baking dish with aluminum foil and bake in the preheated oven for about 40 minutes. After 40 minutes, remove the foil, and continue baking for an additional 25-30 minutes or until the top becomes golden brown, and the potatoes are tender when pierced with a fork. Let the scalloped potatoes rest for a few minutes before serving to allow the sauce to thicken slightly. Serve the creamy and cheesy scalloped potatoes as a delicious side dish alongside your favorite main course. Enjoy!
