Homemade chicken taquitos are a delicious and satisfying snack or meal option. Here’s a simple recipe to make them at home:

Ingredients:

2 cups shredded cooked chicken (rotisserie chicken works well) 1 cup shredded cheese (cheddar, Monterey Jack, or a blend) 1/4 cup diced onion 1/4 cup diced green bell pepper (optional) 1/4 cup chopped cilantro (optional) 1 teaspoon chili powder 1/2 teaspoon cumin 1/2 teaspoon garlic powder Salt and pepper to taste 12-15 small corn or flour tortillas Cooking spray or oil for brushing Instructions: Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Filling: In a mixing bowl, combine the shredded chicken, shredded cheese, diced onion, diced bell pepper, chopped cilantro (if using), chili powder, cumin, garlic powder, salt, and pepper. Mix well until everything is evenly combined.

Prepare the Tortillas: If using corn tortillas, you may need to soften them before rolling.

You can do this by wrapping them in a damp paper towel and microwaving for about 20-30 seconds. If using flour tortillas, they are usually pliable enough as is. Fill and Roll: Place a spoonful of the chicken mixture along the bottom edge of a tortilla. Roll the tortilla tightly around the filling, then place it seam side down on a baking sheet lined with parchment paper or aluminum foil. Repeat with the remaining tortillas and filling.

Bake the Taquitos: Lightly brush the tops of the taquitos with cooking spray or oil. This will help them crisp up in the oven. Alternatively, you can lightly fry them in oil for a crispier texture. Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden and crispy.
