Ingredients: 1 lb. pasta (spaghetti or linguine work well) 1 can (28 oz.) whole peeled tomatoes 4 cloves garlic, minced 1/4 cup extra-virgin olive oil 1/2 tsp. red pepper flakes (optional) Salt and black pepper, to taste Fresh basil leaves, torn or chopped Grated Parmesan cheese, for serving Instructions: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. While the pasta is cooking, heat the olive oil in a large saucepan over medium heat. Add the minced garlic and red pepper flakes (if using) to the saucepan and cook until fragrant, about 1 minute. Crush the tomatoes with your hands or a fork and add them to the saucepan. Season with salt and black pepper to taste. Simmer the tomato sauce for about 10-15 minutes, or until it thickens slightly. Drain the cooked pasta and add it to the tomato sauce. Toss the pasta with the sauce until it is well coated. Serve the pasta in bowls and top with torn or chopped fresh basil leaves and grated Parmesan cheese. Enjoy your delicious Pasta al Pomodoro!
