Increase the speed to medium and continue to mix for about 5 minutes, or until the dough becomes smooth and elastic. Add the softened butter, one tablespoon at a time, mixing well after each addition until all the butter is fully incorporated and the dough is smooth and shiny. Transfer the dough to a lightly greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 to 2 hours, or until doubled in size.
