Ingredients: 2 pounds red or Yukon gold potatoes, washed and cut into bite-sized pieces 3 tablespoons olive oil 4 cloves garlic, minced 1/3 cup grated Parmesan cheese 1 teaspoon dried thyme (or other herbs of your choice such as rosemary or oregano) Salt and pepper, to taste Chopped fresh parsley, for garnish (optional) Instructions: Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it with cooking spray. In a large bowl, combine the olive oil, minced garlic, grated Parmesan cheese, dried thyme, salt, and pepper.
