Taco Stuffed Shells

Taco Stuffed Shells are a delicious and creative twist on traditional stuffed shells.

Ingredients: 1 box (12 ounces) jumbo pasta shells 1 pound ground beef or ground turkey 1 packet taco seasoning mix 1 cup salsa 1 can (15 ounces) black beans, drained and rinsed 1 cup corn kernels (fresh, frozen, or canned) 1 cup shredded Mexican cheese blend 1 cup sour cream 1 cup shredded lettuce 1 cup diced tomatoes 1/4 cup chopped fresh cilantro (optional) Sliced black olives and sliced green onions for garnish Salt and pepper to taste Instructions: Preheat the oven to 350°F (175°C).

Cook the jumbo pasta shells according to the package instructions. Drain and set aside. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat. Add the taco seasoning mix and prepare according to the packet instructions. Stir in the salsa, black beans, and corn.

Cook for an additional 3-5 minutes, allowing the mixture to heat through. Preheat the oven to 350°F (175°C). In a large baking dish, spread a thin layer of salsa on the bottom.

Stuff each cooked pasta shell with the taco meat mixture and place them in the baking dish. Sprinkle shredded Mexican cheese blend over the top of the stuffed shells. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly. While the shells are baking, prepare your toppings.

In separate bowls, set out sour cream, shredded lettuce, diced tomatoes, chopped cilantro, black olives, and sliced green onions. Once the stuffed shells are done baking, remove them from the oven. Serve the taco stuffed shells hot, garnished with your favorite toppings.
