Ingredients:

2 pounds (about 900g) potatoes, peeled and thinly sliced 1 small onion, thinly sliced 2 cups (475ml) heavy cream 2 cloves garlic, minced 1 cup (about 120g) shredded cheese (cheddar, gruyere, or a combination) 2 tablespoons (30g) butter Salt and pepper to taste Fresh thyme or rosemary (optional, for garnish) Instructions: Preheat Oven: Preheat your oven to 375°F (190°C).

Layer Potatoes: In a greased baking dish, arrange a layer of thinly sliced potatoes, slightly overlapping. Sprinkle with a layer of sliced onions and minced garlic. Season with salt and pepper. Repeat Layers: Continue layering potatoes, onions, and garlic until all are used, ending with a layer of potatoes on top.

Pour Cream Mixture: In a saucepan, heat the heavy cream over medium heat until it’s warm but not boiling. Stir in half of the shredded cheese until melted. Pour this mixture evenly over the potatoes in the baking dish.

Dot with Butter: Cut the butter into small pieces and dot the top of the potatoes with it. This adds richness and helps with browning. Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 45 minutes, or until the potatoes are tender when pierced with a fork. Add Cheese: Remove the foil and sprinkle the remaining shredded cheese over the top of the potatoes.

Return the dish to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
