Classic shortbread cookies are simple yet delicious treats that are perfect for any occasion.

Here’s a basic recipe for you to enjoy: Ingredients: 1 cup (2 sticks) unsalted butter, softened 1/2 cup confectioners’ sugar (powdered sugar) 2 cups all-purpose flour 1/4 teaspoon salt Optional: 1 teaspoon vanilla extract, lemon zest, or almond extract for flavor variation Instructions: Preheat your oven to 325°F (160°C).

Line a baking sheet with parchment paper or lightly grease it. In a mixing bowl, cream together the softened butter and confectioners’ sugar until light and fluffy.

This can be done with an electric mixer or by hand using a sturdy spoon. Add the optional flavoring, such as vanilla extract, lemon zest, or almond extract, if desired, and mix until well combined. In a separate bowl, sift together the all-purpose flour and salt. Gradually add the flour mixture to the creamed butter and sugar, mixing until a soft dough forms. Be careful not to overmix. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Roll out the dough to about 1/4 inch (6mm) thickness. You can use a rolling pin and lightly floured surface for this.

Use cookie cutters to cut out shapes from the dough, or simply slice it into squares or rectangles using a sharp knife. Place the cookies onto the prepared baking sheet, leaving a little space between each cookie. Prick the tops of the cookies with a fork to create a decorative pattern (optional).

Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Be careful not to overbake. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, the shortbread cookies are ready to enjoy! Store them in an airtight container at room temperature for up to a week.

These classic shortbread cookies are buttery, crumbly, and utterly delicious. Enjoy them with a cup of tea or coffee, or give them as homemade gifts during the holiday season.
