Creamy Hamburger Potato Soup


1 1/2 lbs lean ground beef 1 medium white onion, diced 1 large garlic clove, minced 6 cups chicken broth 6 cups peeled & diced Russet potatoes 2 cups my favorite frozen vegetables 3 tsp dried basil 2 tsp dried parsley flakes 1 1/2 cups milk 2 tbsp cornstarch 8 oz Velveeta cheese, cubed Instructions: In a skillet, I cook ground beef, onions, and garlic until browned. I drain the grease.

I add the beef mixture to the crockpot or stockpot. I add potatoes, broth, vegetables, basil, and parsley. I cook on low for 6-8 hours or simmer on the stove until potatoes are tender. I whisk cornstarch into the milk, then add to the soup.

I stir in Velveeta until melted. Once done, I serve
