For the burritos: 4 large flour tortillas 1 pound ground beef or turkey 1 small onion, diced 2 cloves garlic, minced 1 bell pepper, diced 1 can (15 ounces) black beans, drained and rinsed 1 cup cooked rice 1 cup shredded cheese (cheddar, Monterey Jack, or a blend) Salt and pepper to taste Optional toppings: chopped tomatoes, shredded lettuce, sliced olives, sour cream, salsa, avocado slices, etc.
For the sauce: 1 can (15 ounces) red enchilada sauce 1/2 cup tomato sauce 1/2 teaspoon ground cumin 1/2 teaspoon chili powder Salt to taste Instructions: Preheat your oven to 350°F (175°C). In a large skillet, cook the ground beef or turkey over medium heat until browned.
Drain any excess fat. Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes. Stir in the black beans and cooked rice. Season with salt and pepper to taste. Cook for another 2-3 minutes until everything is heated through. In a separate saucepan, combine the red enchilada sauce, tomato sauce, ground cumin, chili powder, and salt. Heat the sauce over low heat until warmed through. Spoon a portion of the beef mixture onto each flour tortilla.
Sprinkle some shredded cheese on top of the beef mixture. Roll up the tortillas, tucking in the ends to enclose the filling, and place them seam-side down in a baking dish.
Pour the enchilada sauce over the rolled-up burritos, making sure to coat them evenly. Sprinkle any remaining cheese over the top of the sauce. Bake the burritos in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Once done, remove the baking dish from the oven. Serve the wet burritos hot, garnished with your favorite toppings like chopped tomatoes, shredded lettuce, sliced olives, sour cream, salsa, or avocado slices.
